Ingredients


For the Meatballs:


  • 1/2 lb. ground turkey
  • 1/2 lb. gluten-free sausage (rich in iron)
  • 1 egg (choline and vitamin D)
  • 1/4 cup gluten-free breadcrumbs
  • 1 tbsp flaxseed meal (Omega-3s)
  • 1 tbsp chia seeds (Omega-3s)
  • Salt and pepper to taste


For the Soup:


  • 1 tbsp olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 8 cups bone or chicken broth (rich in choline)
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 tsp oregano
  • 1 tsp thyme
  • Salt and pepper to taste
  • 4 cups baby spinach (rich in Magnesium and iron)
  • 1/4 cup pumpkin seeds


Cooking Instructions


1. Make the Meatballs:

Combine the turkey, sausage, egg, breadcrumbs, flaxseed meal, chia seeds, salt, and pepper. Form the mixture into small meatballs.

2. Prepare the Soup Base:

Heat olive oil in a pot. Sauté the onion and garlic until softened.

3. Add Broth and Veggies:

Pour in the broth, then add the carrots and celery. Season with oregano, thyme, salt, and pepper. Bring the soup to a gentle boil.

4. Cook the Meatballs:

Drop the meatballs into the boiling soup. Cook until done, about 10 minutes.

5. Add Spinach and Seeds:

Stir in the spinach until wilted, then add the pumpkin seeds. Let the soup cook for 2 more minutes before serving.
